One of my favorite breads is Banana Bread. The only reason I buy bananas is for this bread — other than that I hate them lol. I usually will only have 2-3 bananas after my kids find them, but this time I got lucky and no one touched the 4 I had on the counter. 4 ripened bananas took this bread to a whole new level – hence the name bomb.com.

Ingredients:
For Banana Bread:
- 4 very ripe bananas
- 1/3 cup melted unsalted butter
- 1 tsp baking soda
- 3/4 cup sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups of all-purpose flour
- 1/4 tsp nutmeg
- 1/2 tsp cinnamon
- a large mixing bowl
For crunchy topping:
- 3/4 cup flour
- 1/2 cup melted butter
- 1/3 cup brown sugar
- 3 tbsp sugar
- 1 1/2 tsp cinnamon
- a pinch of salt
Directions:
- Preheat oven to 350 degrees
- Spray PAM or olive oil in a 9×5 inch bread pan. I use a glass one that is at least 20 years old. Thanks, Mom!
- Peel and smash your ripened bananas in your large mixing bowl. I like mine with a few small chucks.
- Add the melted butter, vanilla, and egg. Mix well.
- Add flour, baking soda, sugar, nutmeg, and cinnamon. Mix well.
- Pour batter into bread pan — If you do not want to make the crunchy topping this is the point where you put bread in the oven and bake for 40-55 minutes — a toothpick should come out clean once bread is finished.
- If making crunchy topping – Add flour, butter, brown sugar, sugar, cinnamon, and salt. Mix well in small mixing bowl.
- Pour topping on top of banana bread batter and put in the oven.
- Bake for 40-55 minutes depending on how hot your oven cooks. I start checking my bread at 40 minutes with a tooth pick. When the toothpick comes out MOSTLY clean that’s when its ready!
- Cool for 10 minutes. Cut and enjoy!
